It's Possible: Healthy (and Delicious) Cookies

As promised, I'm game to try any (and every) health-ified dessert. So I was thrilled to find this recipe for two-ingredient cookies because a) I already had all two ingredients—bananas and oatmeal—on hand, and b) seriously? Who knew you could make cookies with just two ingredients, and such wholesome ones by the way? Spoiler alert: They're delicious and ridiculously easy to make.

I've also been experimenting with adding other things already in my pantry, like raisins, cinnamon, sea salt, and for a real splurge, peanut butter. My favorite take on them so far is pictured here. I've been halving the original recipe (using just one banana and half a cup of oats) and adding a teaspoon of cinnamon and some cacao nibs. I also like to grease my cookie sheet with a little coconut oil—it's good for you and makes your kitchen smell like a tropical paradise bakery. That technically makes these five-ingredient cookies. If you just so happen to polish off the whole batch in one sitting (like I'm prone to do), no big deal—you just got some servings of fruit, heart-healthy whole grains, and antioxidants.
